Ingredients

  • 6 slices bacon
  • 12 oz. frozen hash brown potatoes
  • 6 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • dash of pepper
  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Cook bacon in a 10-inch skillet until crisp; remove from pan and drain well, reserving drippings in the pan.
  2. Crumble bacon and set aside.
  3. Heat the bacon drippings in the skillet.
  4. Add frozen hash brown potatoes to the skillet.
  5. Cook over low heat until the underside is crisp and lightly browned.
  6. In a bowl, combine eggs, milk, salt, and pepper; stir well.
  7. Pour the egg mixture over the potatoes in the skillet.
  8. Top with shredded cheddar cheese and sprinkle with the crumbled bacon.
  9. Cover and cook over low heat for 10 minutes.
  10. Cut into wedges to serve.
