Ingredients

  • 1 3/4 cups flour
  • 2/3 cup chopped nuts
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 3/4 cup milk
  • 1/3 cup cooking oil

Instructions

  1. Grease 5 (3 1/2-inch) muffin pans or 12 (2 1/2-inch) cups.
  2. In a large mixing bowl, stir together the flour, chopped nuts, sugar, baking powder, and salt.
  3. In a medium mixing bowl, combine the beaten egg, milk, and cooking oil.
  4. Add the egg mixture all at once to the dry mixture.
  5. Stir just until moist.
  6. Pour the batter into the prepared muffin pan.
  7. Bake at 350°F (175°C) for 25 minutes.
  8. Remove from oven and cool.
  9. Frost if desired.
