Ingredients

  • 1/2 cup soft butter
  • 1/4 cup brown sugar
  • 1 cup flour
  • 1/2 cup chopped nuts
  • 1/2 cup coconut
  • 3 eggs
  • 1/2 cup plus 2 tablespoons white sugar
  • 3 tablespoons lemon juice
  • 1 cup cream

Instructions

  1. Blend the first five ingredients with hands until mixed.
  2. Spread the mixture in a 9 x 13-inch pan.
  3. Bake in a 375°F oven until golden brown, stirring occasionally while browning.
  4. Reserve 3/4 cup of the baked mixture for topping.
  5. Pat the remaining mixture into a 10-inch pie tin to form the crust.
  6. Cool the crust completely.
  7. Beat egg yolks until light yellow.
  8. Gradually add 1/2 cup white sugar and beat until thick and light.
  9. Add lemon juice and continue beating.
  10. In a separate bowl, beat egg whites until stiff, adding remaining white sugar gradually.
  11. Whip the cream until soft peaks form.
  12. Fold the whipped cream into the beaten egg white mixture.
  13. Fold in the egg yolk mixture.
  14. Pour the filling into the prepared crust.
  15. Sprinkle the reserved topping over the filling.
  16. Freeze the dessert until firm before serving.
