- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions, omitting oil; drain and set aside.
- In a bowl, combine cottage cheese, beaten egg whites, Parmesan cheese, pepper, and parsley flakes.
- Spray a baking dish with vegetable cooking spray.
- Spread a layer of spaghetti sauce on the bottom of the dish.
- Layer cooked noodles over the sauce.
- Spread half of the cottage cheese mixture over the noodles.
- Add a layer of chopped spinach over the cheese mixture.
- Sprinkle with half of the low-fat mozzarella cheese.
- Repeat layers: sauce, noodles, remaining cheese mixture, spinach, mozzarella.
- Top with remaining spaghetti sauce and Parmesan cheese.
- Sprinkle with parsley flakes if desired.
- Cover with foil and bake for about 40 minutes.
- Remove foil and bake an additional 5 minutes until bubbly and golden.
- Let stand for 10 minutes before serving.
