Ingredients

  • 8 oz. lasagna noodles
  • 20 oz. can chopped spinach, drained
  • 24 oz. 1% cottage cheese
  • 4 egg whites, beaten
  • 1/2 cup Parmesan cheese
  • 1/2 teaspoon pepper
  • 2 tablespoons parsley flakes
  • vegetable cooking spray
  • 8 oz. low-fat mozzarella cheese
  • 30 oz. jar spaghetti sauce

Instructions

  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package instructions, omitting oil; drain and set aside.
  3. In a bowl, combine cottage cheese, beaten egg whites, Parmesan cheese, pepper, and parsley flakes.
  4. Spray a baking dish with vegetable cooking spray.
  5. Spread a layer of spaghetti sauce on the bottom of the dish.
  6. Layer cooked noodles over the sauce.
  7. Spread half of the cottage cheese mixture over the noodles.
  8. Add a layer of chopped spinach over the cheese mixture.
  9. Sprinkle with half of the low-fat mozzarella cheese.
  10. Repeat layers: sauce, noodles, remaining cheese mixture, spinach, mozzarella.
  11. Top with remaining spaghetti sauce and Parmesan cheese.
  12. Sprinkle with parsley flakes if desired.
  13. Cover with foil and bake for about 40 minutes.
  14. Remove foil and bake an additional 5 minutes until bubbly and golden.
  15. Let stand for 10 minutes before serving.
