Ingredients

  • 1 lb. lean boneless round steak
  • 2 cups cubed carrots
  • 1 medium onion
  • 2 1/4 cups cubed red potatoes
  • 1 (14 1/2 oz.) no-salt tomatoes
  • 1 cup water
  • 1 cup brewed coffee
  • 2 Tbsp. molasses
  • 1 Tbsp. Worcestershire sauce
  • 1 beef bouillon cube
  • 1/2 tsp. thyme
  • 1/2 tsp. marjoram
  • 1/4 tsp. hot sauce (optional)
  • 1 bay leaf

Instructions

  1. Trim fat from the steak.
  2. Spray a Dutch oven with cooking spray and brown the steak on all sides.
  3. Remove the steak and place on paper towels to drain. Wipe grease from the oven.
  4. Re-coat the Dutch oven with cooking spray.
  5. Add carrots and onion, sauté until slightly brown.
  6. Return the steak to the pan.
  7. Add all other ingredients: no-salt tomatoes, water, brewed coffee, molasses, Worcestershire sauce, beef bouillon cube, thyme, marjoram, hot sauce (optional), and bay leaf.
  8. Stir and simmer on low for 1 1/2 hours.
  9. Add beans and simmer for an additional 30 minutes.
