Ingredients

  • 6 oz bulk pork sausage
  • 1/2 cup green pepper, chopped
  • 2 medium zucchini, sliced thin
  • 1 medium onion, chopped fine
  • 1 (5 oz) can tomatoes, chopped
  • 1 (15 oz) can kidney beans
  • 1 (15 oz) can beef broth
  • 1/2 cup water

Instructions

  1. Brown sausage in a Dutch oven or large saucepan; drain well and remove from pan.
  2. Drain fat from the pan and add chopped green pepper, sliced zucchini, and chopped onion.
  3. Cook over medium heat for 3 minutes.
  4. Stir in chopped tomatoes, kidney beans, beef broth, water, and cooked sausage.
  5. Bring to a boil, reduce heat, cover, and simmer about 15 minutes to blend flavors.
