Ingredients

  • 1 cup self-rising flour
  • 1 1/2 cups chopped pecans
  • 1/2 cup butter, melted
  • 1 (8 oz.) package cream cheese
  • 1 (6 oz.) package frozen coconut
  • 1 cup powdered sugar
  • 1 cup whipped cream
  • 1/4 cup sugar
  • 1 large vanilla instant pudding
  • 2 cups milk

Instructions

  1. In a small bowl, mix the self-rising flour, melted butter, and 1 cup chopped pecans.
  2. Press the mixture into a 2-quart dish or 10-inch pie pan.
  3. Bake at 350°F for 20 minutes. Cool.
  4. Place 1/2 cup chopped pecans in a shallow pan and bake in the oven with the pastry until slightly browned.
  5. In a mixing bowl, beat the cream cheese until smooth.
  6. In a separate bowl, prepare the instant vanilla pudding with 2 cups of milk according to package instructions.
  7. Fold the whipped cream into the pudding mixture.
  8. Spread the coconut evenly over the cooled crust.
  9. Pour the coconut pudding mixture over the coconut layer.
  10. Sprinkle the baked chopped pecans over the top before serving.
