Ingredients

  • 1 lb. 13 oz. can pear halves
  • 2 egg yolks
  • 1/4 cup sugar
  • 2 Tbsp lemon juice
  • 2 Tbsp plus 2/3 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 2/3 cup graham cracker crumbs
  • 1/3 cup firmly packed brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Drain the pear halves and set aside.
  3. In a mixing bowl, beat the egg yolks with sugar until smooth.
  4. Add lemon juice, vanilla extract, salt, and soda to the egg yolk mixture and mix well.
  5. Stir in the flour gradually until combined to form a batter.
  6. Gently fold in the chopped walnuts.
  7. Place pear halves in a baking dish.
  8. Pour the batter over the pears evenly.
  9. In a separate bowl, combine graham cracker crumbs, brown sugar, cinnamon, and melted butter to make the topping.
  10. Sprinkle the topping over the batter and pears.
  11. Bake in the preheated oven for approximately 30 minutes or until golden and set.
  12. Serve warm or cooled, optionally with whipped cream or ice cream.
