Ingredients

  • 8 medium potatoes
  • 3 tsp. chives
  • 1 tsp. dried parsley
  • 1 small onion
  • 1 Tbsp. sugar
  • 2 hard-boiled eggs
  • 1/2 c. sour cream
  • 3 ribs celery
  • 1 tsp. celery flakes
  • 1 tsp. dill weed
  • 2 Tbsp. pickle relish
  • 2 tsp. prepared mustard
  • dash of salt
  • dash of pepper

Instructions

  1. Cook potatoes with peelings on; cool, peel, and cube.
  2. Chop the small onion and hard-boiled eggs.
  3. Combine potatoes, onion, eggs, and celery in a large bowl.
  4. Mix chives, dried parsley, celery flakes, dill weed, sugar, salt, and pepper into mayonnaise and sour cream to make the dressing.
  5. Add the dressing to the potato mixture and stir until well coated.
  6. Chill the potato salad before serving.
