  • 3 1/2 lb. boneless bottom roast

  • 1/4 cup catsup
  • 1 tsp. minced garlic
  • 1/4 tsp. dry mustard
  • 1/4 stick margarine
  • 1/4 tsp. thyme
  • 2 medium onions, sliced
  • 1 bay leaf
  • 1 package fresh mushrooms, sliced
  • 1/4 tsp. dried rosemary

Instructions

  1. Preheat the oven and prepare a roasting pan with vegetable cooking spray.
  2. Season the boneless bottom roast with salt and pepper.
  3. In a mixing bowl, combine water, cooking sherry, catsup, minced garlic, dry mustard, margarine, thyme, and dried rosemary to make the sauce.
  4. Place the seasoned roast in the prepared roasting pan.
  5. Surround the roast with sliced onions and sliced mushrooms.
  6. Add the bay leaf to the pan.
  7. Pour the herb mixture over the roast and vegetables.
  8. Cover the pan and roast in the oven at 350°F (175°C) for approximately 3 hours or until the meat is tender.
  9. Remove from oven, discard bay leaf, and serve hot.
