Ingredients

  • 1 lb. uncooked shrimp, peeled and deveined, tails intact
  • 1 c. dry unseasoned bread crumbs
  • 2 large cloves garlic, finely chopped
  • 1/2 tsp. dried thyme leaves, crumbled
  • 2 Tbsp. chopped fresh parsley
  • 1/4 c. (1/2 stick) unsalted butter, softened
  • 3 drops hot pepper sauce
  • 1 Tbsp. fresh lemon juice
  • 1/8 tsp. salt
  • freshly ground black pepper

Instructions

  1. Rinse the shrimp and pat dry.
  2. With a sharp knife, cut along the channel where the vein was removed.
  3. Preheat oven to 400°F and lightly grease four individual gratin dishes or a 1 1/2-quart baking dish.
  4. In a small bowl, mix together the bread crumbs, garlic, thyme, parsley, butter, hot pepper sauce, and lemon juice until well blended.
  5. Season the mixture to taste with salt and black pepper.
  6. Open each shrimp so the cut edges spread out slightly, butterflying them.
  7. Fill the curve of each shrimp with some stuffing.
  8. Place the stuffed shrimp, stuffing side up, in the prepared dishes and sprinkle remaining stuffing over the top.
  9. Bake for 15 minutes or until the shrimp is opaque and the stuffing is golden.
  10. Serve immediately.

Tips & Substitutions

For a delightful twist, consider using panko breadcrumbs instead of regular bread crumbs for added crunch. You can also substitute the shrimp with scallops or even crab meat for a different flavor profile. When seasoning, remember that the hot pepper sauce can be adjusted based on your spice preference. Fresh herbs like basil or dill can also be great alternatives to parsley.

Serving Suggestions

These herb stuffed shrimp are perfect as a stand-alone dish or served alongside a fresh green salad. They also pair beautifully with Herbed Crackers for a delightful appetizer spread. For a complete meal, consider serving them with a side of garlic butter pasta or crusty bread to soak up the delicious stuffing.

Storage & Reheating

Store any leftover stuffed shrimp in an airtight container in the refrigerator for up to 2 days. To reheat, place them in a preheated oven at 350°F for about 10 minutes, or until heated through. Avoid using a microwave as it can make the shrimp rubbery.
