Ingredients

  • 9-inch unbaked pie shell
  • 1/4 lb. Swiss cheese, shredded
  • 1 (4 oz.) can mushrooms, drained
  • 8 oz. cottage cheese
  • 1 cup milk
  • 4 eggs
  • 1 tsp. prepared mustard
  • 1/2 tsp. thyme
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Preheat oven to 425°F.
  2. Sprinkle shredded Swiss cheese and drained mushrooms evenly in the unbaked pie shell.
  3. In a covered blender container, blend cottage cheese, milk, eggs, prepared mustard, thyme, salt, and pepper until smooth.
  4. Pour the blended mixture into the pie crust over the cheese and mushrooms.
  5. Bake at 425°F for 15 minutes.
  6. Reduce oven temperature to 325°F and bake for an additional 35 minutes or until a knife inserted into the center comes out clean.
