- In a saucepan, melt the margarine or butter.
- Add the chopped celery and cook until tender.
- Stir in the dried, crushed oregano leaves, salt, garlic powder, and pepper.
- Cut the potatoes into 1/2-inch slices, cutting not quite through the slices.
- Place each potato on a large piece of foil enough to wrap the potato.
- Drizzle about half of the spice mixture into the slits of each potato.
- Insert half a sliced onion into each potato.
- Top with the remaining spice mixture.
- Wrap each potato securely in foil.
- Grill over hot coals for 40 to 45 minutes until tender.
