Ingredients

  • 3/4 cup margarine or butter
  • 1/4 cup chopped celery
  • 1 teaspoon dried, crushed oregano leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • pepper
  • 6 medium potatoes
  • 2 medium onions, thinly sliced and cut in half crosswise

Instructions

  1. In a saucepan, melt the margarine or butter.
  2. Add the chopped celery and cook until tender.
  3. Stir in the dried, crushed oregano leaves, salt, garlic powder, and pepper.
  4. Cut the potatoes into 1/2-inch slices, cutting not quite through the slices.
  5. Place each potato on a large piece of foil enough to wrap the potato.
  6. Drizzle about half of the spice mixture into the slits of each potato.
  7. Insert half a sliced onion into each potato.
  8. Top with the remaining spice mixture.
  9. Wrap each potato securely in foil.
  10. Grill over hot coals for 40 to 45 minutes until tender.
