Ingredients

  • 2 c. sifted all-purpose flour
  • 1/3 c. instant milk
  • 1/4 c. sugar
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. oil
  • 1 egg
  • 1 c. water
  • 1/3 c. jam or preserves

Instructions

  1. Preheat oven to 400°F.
  2. Mix together all dry ingredients, then add oil, egg, and water.
  3. Mix quickly but well.
  4. Spoon half of the batter into 12 greased muffin cups, filling them about 1/3 full.
  5. Drop about 1 teaspoon of jam into the center of each muffin.
  6. Spoon the remaining batter into the muffin cups.
  7. If desired, sprinkle tops with a little cinnamon sugar.
  8. Bake near the center of the oven at 400°F for 20 to 25 minutes.
