High Fiber Loaf
Ingredients
- 2 c. whole wheat flour ⓘ
- 1 c. unbleached white flour ⓘ
- 1 c. bran cereal ⓘ
- 1/2 c. unprocessed bran ⓘ
- 1 tsp. baking soda ⓘ
- 1 Tbsp. cinnamon ⓘ
- 1/4 tsp. ginger ⓘ
- 1 1/2 c. brown sugar ⓘ
- 1 c. chopped nuts ⓘ
- 1 1/4 c. oil ⓘ
- 4 eggs ⓘ
- 2 tsp. vanilla ⓘ
- 1 Tbsp. orange peel ⓘ
- 2 c. grated carrots or zucchini ⓘ
- 1 c. raisins, currants or dried pappay chips ⓘ
- 2 Tbsp. apple butter
Instructions
- Mix dry ingredients in large bowl.
- Add oil, eggs and vanilla. Mix in remaining ingredients.
- Pour into 2 greased loaf pans. Bake 1 hour at 350°.
