Ingredients

  • 1 3/4 cups flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/3 cup oil
  • 1 egg

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Mix thoroughly.
  3. Make a well in the center; pour in buttermilk, oil, and beaten egg.
  4. Immediately stir with a fork just until dry ingredients are moistened; batter will be lumpy.
  5. Spoon into 6 greased muffin cups, filling to the rim.
  6. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
  7. Serve hot.
