Ingredients

  • 4 tsp. baking soda
  • 2 c. raisins
  • 2 1/2 c. boiling water
  • 1 c. light brown sugar
  • 1 c. white sugar
  • 1 1/2 c. chopped nuts
  • 4 c. flour
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 c. rum (optional)

Instructions

  1. Mix baking soda, raisins, rum (if using), and boiling water in a bowl.
  2. Cover and let sit for 2 hours.
  3. In a separate bowl, combine flour, light brown sugar, white sugar, chopped nuts, salt, and cinnamon.
  4. Add the dry ingredients to the raisin mixture and stir well.
  5. Divide the batter into greased three 1-pound coffee cans.
  6. Bake at 325°F (160°C) for 1 hour and 10 minutes.
  7. Remove from cans and place on a wire rack to cool.
  8. Slice and serve.
