Ingredients

  • 2 lb. cooked beef or lamb
  • 2 onions, chopped
  • 1 large slice of bread
  • 1 cup milk
  • 2 eggs
  • 2 Tbsp. curry powder
  • 1 tsp. sugar
  • juice of lemon or 2 Tbsp. vinegar
  • 6 to 8 almonds, chopped or 1/2 cup coconut
  • 2 Tbsp. cooking oil
  • bay leaves or lemon slices for garnish

Instructions

  1. Mince the cooked beef or lamb.
  2. Soak the slice of bread in milk and then squeeze out the excess liquid.
  3. Fry chopped onions in cooking oil until browned.
  4. Add curry powder to the onions and cook for a few minutes, being careful not to burn.
  5. Mix the minced meat, bread, and one beaten egg together.
  6. Whisk the other egg with milk.
  7. Place the curry mixture into greased cups, then pour some of the egg and milk mixture over each.
  8. Insert a slice of lemon or a bay leaf into each cup for garnish.
  9. Bake in a preheated oven at 350°F (180°C) for 30 minutes.
  10. Serve in cups with rice and chutney, or bake in a casserole.
