Ingredients

  • 1 lb. package Great Northern beans
  • 1 (32 oz.) can tomatoes
  • 1 large red bell pepper, chopped
  • 1 large garlic clove, chopped
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 1/2 teaspoon tarragon
  • 1 tablespoon parsley flakes
  • 1 tablespoon paprika
  • 1 large onion, chopped
  • 1 teaspoon chili powder
  • 1/2 cup white wine
  • 1/2 teaspoon basil

Instructions

  1. Wash the beans, place them in a large pot, cover with water, and soak overnight.
  2. Drain the beans before cooking.
  3. Add 2 quarts of water and the ham hock or ham quarters to the pot.
  4. Simmer the mixture for 2 to 2 1/2 hours until the beans are tender and flavors meld.
  5. Add chopped onion, canned tomatoes, chopped red bell pepper, garlic, bay leaf, thyme, tarragon, parsley flakes, paprika, chili powder, basil, celery salt, salt, pepper, and white wine.
  6. Continue to simmer the soup for an additional 30 to 40 minutes to develop flavors.
