Ingredients

  • 1 1/2 lb hamburger
  • 15 rolled Ritz crackers
  • 1 onion, chopped
  • 2 eggs
  • 1/2 cup ketchup
  • salt and pepper to taste
  • green peppers, thinly sliced (optional)
  • 5 potatoes, quartered
  • 1 or 2 cans green beans

Instructions

  1. Mix hamburger, crushed Ritz crackers, chopped onion, eggs, salt, and pepper; shape into a loaf by hand.
  2. Spread ketchup over the top of the meat loaf.
  3. If desired, place thin slices of green peppers over the ketchup to add flavor.
  4. Spray a large roasting pan with cooking oil or Pam.
  5. Place the meat loaf in the center of the pan.
  6. Arrange the quartered potatoes on one end of the pan and green beans on the opposite end.
  7. Add about 1 inch of water to the pan.
  8. Bake at 350° to 375°F for 60 to 75 minutes.
