Ingredients

  • 1 1/2 c. raisins
  • 1 c. granulated sugar
  • 1 Tbsp. butter or margarine
  • 1 1/2 c. boiling water
  • 2 1/4 c. flour
  • 2 tsp. baking soda
  • 1/2 tsp. light salt
  • 1 egg, beaten
  • 1 c. walnut pieces

Instructions

  1. In a large mixing bowl, combine the raisins, sugar, and butter or margarine.
  2. Pour the boiling water over the mixture.
  3. Cover and set aside for 8 to 10 hours or overnight.
  4. Preheat oven as needed, then add the beaten egg, flour, baking soda, salt, and walnut pieces to the soaked mixture.
  5. Mix thoroughly until well combined.
  6. Pour into a greased baking pan and bake at 350°F (175°C) for approximately 60 minutes or until a toothpick inserted in the center comes out clean.
