Ingredients

  • 2 c. sugar
  • 1 c. shortening
  • 3 eggs
  • 1 c. buttermilk
  • 1 c. blackberry jam
  • 3 c. sifted flour
  • 1 tsp. soda
  • 1 c. chopped nuts
  • 1 c. raisins
  • 1 c. coconut
  • 1 c. chopped dates
  • 1 large apple, grated

Instructions

  1. Cream shortening and sugar; add eggs and mix well.
  2. Add jam and buttermilk, alternating with sifted flour and soda.
  3. Stir in chopped nuts, raisins, coconut, chopped dates, and grated apple.
  4. Pour batter into three greased and floured 9-inch pans.
  5. Bake at 350°F for 30 to 40 minutes until a toothpick inserted into the center comes out clean.
  6. Frost with your preferred jam cake filling or frosting.
