Ingredients

  • 1/2 lb. butter or margarine
  • 1 small onion, finely chopped
  • 1 lb. chicken livers
  • 1 1/2 cups chicken broth
  • 2 Tbsp. sweet sherry
  • 1/2 tsp. paprika
  • 1 cup chopped walnuts
  • 1/8 tsp. allspice
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 clove minced garlic
  • 1/4 cup bourbon
  • 1 envelope plain gelatin

Instructions

  1. Melt the butter in a skillet.
  2. Add the chopped onion and cook until softened.
  3. Add the chicken livers and cook for 10 minutes, stirring occasionally.
  4. Stir in 3/4 cup of chicken broth, sherry, paprika, allspice, salt, pepper, and minced garlic.
  5. Cook for an additional 5 minutes. Remove from heat and stir in the bourbon.
  6. Soften the gelatin in the remaining 3/4 cup of chicken broth and dissolve over boiling water.
  7. Place the chicken liver mixture in a blender and blend until smooth.
  8. Stir the dissolved gelatin and chopped walnuts into the blended mixture.
  9. Pour into a mold or small molds and chill until firm.
  10. Can be frozen for later use.
