Ingredients

  • 10 slices bread
  • 10 oz. baked ham or 2 cups cooked sausage
  • 6 oz. sharp Cheddar cheese grated
  • 1 1/2 cups dried red or green peppers
  • 1 cup sliced green onions
  • 8 large eggs
  • 3 cups milk
  • 1 1/2 teaspoons dry mustard
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika

Instructions

  1. Arrange bread slices in overlapping rows in the bottom of a 3-quart baking dish.
  2. Sprinkle chopped baked ham or cooked sausage, grated cheese, dried peppers, and sliced green onions over the bread.
  3. In a large bowl, beat the eggs until well combined; add milk, dry mustard, pepper, and paprika, and mix thoroughly.
  4. Pour the egg mixture evenly over the layered bread and toppings.
  5. Cover the dish and refrigerate overnight to allow flavors to meld.
  6. Preheat oven to 350°F and bake the casserole for 40 to 45 minutes until set and golden.
  7. Let the casserole stand for 10 minutes before serving.
  8. Serve warm, optionally with white or cheese sauce if desired.
