Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 lb ground veal
  • 1 box frozen chopped spinach, cooked and drained
  • 3 hard boiled eggs, chopped fine
  • 1/2 cup Parmesan cheese
  • salt to taste

Instructions

  1. Brown the ground beef, then remove from heat and drain excess fat.
  2. In a mixing bowl, combine the cooked and drained spinach, chopped hard boiled eggs, Parmesan cheese, salt, and pepper.
  3. Add the cooked ground beef to the mixture and stir until well blended.
  4. Use this filling to stuff homemade or store-bought pasta dough to make ravioli.
  5. Cook the ravioli in boiling water until they float to the surface, about 3-4 minutes, then serve.
