  • 3 hot peppers
  • 1 pt. oil
  • 1 1/2 c. sugar
  • 1/2 c. salt
  • 48 oz. tomato paste
  • 2 Tbsp. garlic salt
  • 2 Tbsp. oregano
  • 2 Tbsp. parsley

Instructions

  1. Boil the tomatoes, green peppers, onions, and hot peppers together for 1 hour.
  2. Add the remaining ingredients: oil, sugar, salt, tomato paste, garlic salt, oregano, and parsley.
  3. Boil the mixture for another hour.

Tips & Substitutions

For a richer flavor, consider roasting the tomatoes and peppers before boiling. You can substitute fresh herbs with dried ones if necessary, using 1 teaspoon of dried herbs for every tablespoon of fresh. If you prefer a thicker sauce, reduce the boiling time or add more tomato paste. Adjust the sugar to balance the acidity of the tomatoes to your taste.
