Ingredients

  • 1/4 lb. butter
  • 1/2 cup green onions, chopped
  • 4 cans hominy, drained and rinsed
  • 1 cup sour cream
  • 1 (4 oz.) can green chilies, chopped and drained
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 cup sharp Cheddar cheese, grated
  • fresh parsley, chopped

Instructions

  1. Melt butter in a skillet and sauté chopped green onions and tops for 3 minutes.
  2. Add drained and rinsed hominy to the skillet and heat until warm.
  3. Stir in sour cream, chopped green chilies, pepper, and salt; heat until bubbly.
  4. Remove from heat and stir in chopped fresh parsley.
  5. Transfer to a baking dish, top with grated Cheddar cheese, and broil until the cheese melts and is bubbly.
