Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup canned pumpkin
  • 1 teaspoon lemon juice
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 3 teaspoons pumpkin pie spices
  • 1/2 teaspoon salt
  • 1 cup pecans
  • 1/2 box powdered sugar

Instructions

  1. Preheat oven to 375°F.
  2. Grease a cookie sheet.
  3. Beat eggs on high for 3 minutes.
  4. Beat in sugar.
  5. Stir in canned pumpkin and lemon juice.
  6. In another bowl, stir together flour, baking powder, pumpkin pie spices, and salt.
  7. Fold the dry mixture into the pumpkin mixture.
  8. Spread the batter into the greased cookie sheet.
  9. Spread with chopped pecans.
  10. Bake for 15 minutes.
  11. Place powdered sugar on a kitchen towel.
  12. Turn the cake onto the powdered sugar towel and roll up until cool.
