Ingredients

  • 3 Tbsp. melted butter
  • 3 Tbsp. all-purpose flour
  • 1/4 c. minced onion
  • 1 tsp. salt
  • 1 1/2 c. milk
  • 3/4 tsp. chili powder
  • dash of pepper
  • 1 (29 oz.) can white hominy
  • 1 c. shredded Cheddar cheese

Instructions

  1. Combine melted butter and flour; cook over slow heat.
  2. Stir until smooth.
  3. Slowly add milk, stirring constantly, until mixture begins to thicken.
  4. Add minced onion, salt, chili powder and pepper; mix well.
  5. Wash hominy and drain; stir into sauce.
  6. Pour mixture into a greased 1-quart casserole dish.
  7. Sprinkle with shredded Cheddar cheese.
  8. Bake at 325°F for 40 minutes or until hot and bubbly.
