Ingredients

  • 1 cup sugar
  • 1/4 pound butter
  • 1 pound creamed cheese
  • 1/4 cup sifted flour
  • 1/4 cup honey
  • 5 eggs, separated
  • 1/2 cup half and half
  • 1 teaspoon almond extract
  • 1/2 cup ground almonds

Instructions

  1. Cream butter and sugar together.
  2. Add cream cheese and beat until fluffy.
  3. Blend in sifted flour and honey, then incorporate egg yolks.
  4. Beat the mixture well.
  5. Add half and half and almond extract, then gently fold in beaten egg whites.
  6. Fold in ground almonds with a few strokes.
  7. Pour the batter into a greased 9-inch spring-form pan.
  8. Bake in a 325°F oven for 1 hour.
  9. Turn off the oven and let the cheesecake cool inside with the door closed for 1 hour.
  10. Remove from the pan and chill before serving.
  11. Add topping of your choice or leave plain.
