  5. Roast, uncovered, in a 425°F oven for 25 to 35 minutes or until the thermometer registers 160°F.
  6. Meanwhile, prepare the salad dressing by mixing 1/3 cup fat-free mayonnaise or salad dressing with 1/3 cup pineapple or orange juice.
  7. Let the roasted pork rest for a few minutes, then slice.
