Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup butter
  • 1/2 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 2 cups all-purpose flour

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease cookie sheets.
  3. Combine sugar, butter, and honey in a saucepan over low heat.
  4. When melted remove from heat and let cool.
  5. Beat eggs, vanilla, baking soda and ginger together.
  6. Slowly add to cooled honey mixture.
  7. Gradually add flour.
  8. Drop by the spoonful onto cookie sheets.
  9. Bake 12-15 minutes or until golden brown.
  10. Transfer to wire racks to cool.
