Ingredients

  • 2 c. cooked chicken, cubed
  • 1 c. celery, chopped
  • 3/4 c. mayonnaise
  • 1/3 c. green pepper
  • 2 Tbsp. chopped onion
  • 2 Tbsp. pimento, chopped
  • 2 tsp. lemon juice
  • 1/2 tsp. salt
  • 3/4 c. Cheddar cheese, cubed
  • 1/2 c. potato chips, crushed

Instructions

  1. Combine all ingredients, except cheese and potato chips, in a 1-quart casserole.
  2. Cook in microwave on High for 4 to 5 minutes, or until heated through.
  3. Stir in cheese.
  4. Top with crushed potato chips.
  5. Cook in microwave on Medium for 2 minutes, or until cheese is softened.
