Ingredients

  • 2 Tbsp. margarine
  • 1/4 c. flour
  • 1/4 c. brown sugar
  • 1/4 tsp. salt (optional)
  • 1 (29 oz.) drained sliced peaches
  • 1 (20 oz.) drained pineapple chunks
  • 1 (16 oz.) drained sweet cherries
  • 3/4 to 1 c. coconut

Instructions

  1. Preheat oven to 400°F.
  2. Melt margarine in a 1 1/2-quart casserole dish in the oven.
  3. Remove from oven and stir in flour, brown sugar, and salt.
  4. Add drained sliced peaches, pineapple chunks, and sweet cherries.
  5. Toss lightly to combine all ingredients.
  6. Bake for 20 minutes.
  7. Sprinkle coconut on top.
  8. Bake for an additional 10 minutes.
  9. Serve as is for brunch or topped with ice cream for dessert.
