Ingredients

  • 1 1/2 cups yellow corn meal
  • 3 eggs
  • 1/3 cup cooking oil
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 small can cream-style corn
  • 1 cup sweet milk
  • 1 cup sharp cheese
  • 4 or 5 hot peppers
  • 1 large onion
  • 1 bell pepper
  • 1 small jar pimentos
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large mixing bowl, combine corn meal, baking powder, sugar, and salt.
  3. Add eggs, cooking oil, cream-style corn, and sweet milk; mix until smooth.
  4. Stir in chopped hot peppers, diced onion, finely chopped bell pepper, pimentos, and shredded cheese.
  5. Pour batter into a greased baking dish.
  6. Bake for 30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  7. Let cool slightly before serving.
