Hot Or Cold String Bean Salad

A versatile string bean salad with garlic, onion, cheese, and balsamic vinegar, suitable as a hot or cold side dish for any meal or gathering.

Ingredients

  • 1 pkg. string beans
  • 2 cloves garlic
  • 1/2 large onion
  • 1 Tbsp. parsley
  • 1/4 c. bread crumbs
  • 4 or more Tbsp. grated cheese
  • 1/4 c. shredded Mozzarella
  • 4 to 6 Tbsp. balsamic vinegar
  • 2 Tbsp. olive oil

Instructions

  1. Mince the garlic and slice the onion into thin strips.
  2. Place the string beans, garlic, onion, and parsley in a shallow baking dish.
  3. Toss until well mixed.
  4. Sprinkle with grated cheese, bread crumbs, and shredded mozzarella.
  5. Pour in balsamic vinegar and olive oil or plain vinegar.
  6. Cover with foil.
  7. Bake at 350°F for approximately 20 minutes, then stir.
  8. Uncover and bake for another 10 to 12 minutes until the onion and beans are tender.
  9. Toss with additional bread crumbs if the mixture is too fluid.
  10. Serve hot or cold.
