Ingredients

  • 1 1/2 qt pickling cucumbers, sliced into 1/2-inch pieces
  • 2 medium sweet green peppers, seeded and cut into strips
  • 2 medium sweet red peppers, seeded and cut into strips
  • 1 1/2 cups sliced carrots
  • 3 cups cauliflowerets
  • 1 cup peeled pickling onions
  • 1 1/2 qt long red, green, or yellow peppers
  • 3 or 4 fresh jalapeno peppers or dried red pepper pods
  • 1 1/2 cups canning salt
  • 4 quarts water
  • 1/4 cup sugar
  • 2 tablespoons prepared horseradish
  • 2 cloves garlic
  • 10 cups vinegar

Instructions

  1. Prepare cucumbers, sweet green and red peppers, carrots, cauliflower, and onions by washing and cutting into appropriate sizes.
  2. Dissolve 1 1/2 cups canning salt in 4 quarts of water, then pour over the vegetables and let stand for 1 hour.
  3. Using rubber gloves, remove seeds from hot peppers and cut into 1 1/2 inch pieces.
  4. Combine remaining ingredients and simmer for 15 minutes.
  5. Remove garlic from the hot mixture.
  6. Drain the vegetables thoroughly.
  7. Pack the vegetables and peppers (not including jalapenos) into hot jars, leaving 1/4 inch headspace.
  8. Add a piece of jalapeno or red pepper pod to each jar.
  9. Pour the hot pickling liquid over the vegetables and peppers, maintaining the headspace.
  10. Seal the jars with caps and process in a boiling water bath for 10 minutes.
