Ingredients

  • 1 (20 oz.) can pineapple chunks
  • 1/2 cup sugar
  • 3 tablespoons flour
  • 1/4 cup butter or oleo, melted
  • 1 1/2 cups (6 oz.) shredded Cheddar cheese, divided
  • 2/3 cup coarsely crushed saltines (14 crackers)

Instructions

  1. Drain pineapple, reserving 1/4 cup of the juice; set aside.
  2. In a medium bowl, combine sugar and flour.
  3. Add the melted butter and 1 cup of shredded cheese; mix well.
  4. Gently stir in the drained pineapple.
  5. Pour the mixture into a greased shallow 1 1/2-quart baking dish.
  6. Sprinkle crushed saltine crackers on top and drizzle with the reserved pineapple juice.
  7. Bake uncovered at 350°F for 30 to 35 minutes or until bubbly.
  8. Remove from oven and sprinkle with the remaining shredded cheese.
  9. Serve hot as a delightful side dish, especially with ham.
