Ingredients

  • 1/3 to 1/2 cup whole wheat kernels
  • water to cover kernels
  • 2 cups low-fat milk
  • 2 packages active dry yeast
  • 2 teaspoons salt
  • 2 tablespoons oil
  • 8 ounces cottage cheese
  • 3 cups whole wheat flour
  • 3 cups all-purpose flour

Instructions

  1. Cover whole wheat kernels with water and soak for 2 to 4 hours. Drain.
  2. In a large bowl, dissolve yeast in warm milk. Add salt, oil, and cottage cheese. Blend well.
  3. Add 1/2 of the soaked wheat kernels, all of the whole wheat flour, and most of the all-purpose flour. Mix thoroughly.
  4. Knead the dough until smooth. Cover and let rise in a warm place for 40 minutes.
  5. Turn out the dough onto a lightly floured board and knead again.
  6. Divide the dough into 20 equal pieces and form into rolls.
  7. Place the rolls on cookie sheets.
  8. Let the rolls rise for 20 minutes. Brush with warm water.
  9. Sprinkle the remaining slightly crushed wheat kernels on top of the rolls.
  10. Bake at 400°F (200°C) for 15 minutes. Remove from oven, cover, and cool.
