Ingredients

  • 2 cups cooked shrimp, peeled
  • 2 cups chopped celery
  • 1/2 cup chopped green pepper
  • 1/2 cup slivered almonds
  • 1/2 cup mayonnaise or salad dressing
  • 1/2 cup condensed cream of celery soup
  • 1 (2 oz.) jar pimiento
  • 2 teaspoons grated onion
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 3 cups crushed potato chips
  • 1/2 cup grated Cheddar cheese

Instructions

  1. Thaw shrimp if frozen; rinse and drain, then cut large shrimp in half if necessary.
  2. Combine all ingredients except potato chips and cheese; mix well.
  3. Pour mixture into a well-greased 2-quart baking dish or six well-greased ramekins.
  4. Bake at 350°F for 20 minutes.
  5. Mix potato chips and grated Cheddar cheese together.
  6. Sprinkle the chip and cheese mixture over the shrimp mixture.
  7. Return to the oven and bake for an additional 10 minutes or until thoroughly heated.
