Ingredients

  • 2 medium size onions
  • 1 green pepper, chopped
  • 1 clove garlic, pressed
  • 1 lb. ground beef
  • 2 tsp. salt
  • 1 (28 oz.) can tomatoes
  • 1 (18 oz.) can corn
  • 1 (6 oz.) can olives, drained and chopped
  • 2 1/2 Tbsp. chili powder
  • 1 c. yellow corn meal
  • 3 c. cold milk
  • 2 c. grated Cheddar or Monterey Jack cheese

Instructions

  1. Brown onion, peppers, garlic and ground beef together.
  2. Drain off excess fat.
  3. While meat is cooking, soak 1 cup corn meal in 3 cups cold milk.
  4. Add salt, corn, tomatoes, olives and chili powder to meat mixture.
  5. Cook slowly.
  6. Add mixed corn meal/milk mixture to meat and vegetables.
  7. Mix thoroughly.
  8. Remove from stove, pour into large casserole or rectangle Pyrex pan.
  9. Bake for about 45 minutes. Add 2 cups grated cheese and bake additional 10 to 15 minutes. Serves 12.
