Ingredients

  • 8 slices whole wheat bread
  • 1/4 cup chopped green pepper
  • 1 small onion
  • 1 (7 oz.) can tuna
  • 3/4 teaspoon salt
  • 4 oz. shredded mozzarella cheese
  • 2 eggs
  • 2 cups milk
  • 1/2 teaspoon crumbled leaf oregano

Instructions

  1. Place 4 slices of toasted bread in a buttered 6-cup shallow baking dish.
  2. Drain tuna; combine with chopped green pepper, diced onion, and 1/4 teaspoon of salt in a small bowl.
  3. Stir in half the shredded mozzarella cheese.
  4. Spread the tuna mixture over the bread slices.
  5. Top with the remaining 4 slices of toasted bread.
  6. Beat the eggs in a medium-sized bowl; stir in milk, remaining 1/2 teaspoon salt, and crumbled oregano.
  7. Pour the milk mixture over the bread layers; sprinkle with the remaining shredded cheese.
  8. Cover and refrigerate for at least 1 hour or overnight.
  9. Press the bread down into the milk mixture before baking.
  10. Bake in a moderate oven at 375°F (190°C) for 45 minutes or until puffed and golden.
  11. Remove from oven; let stand 10 minutes before serving.
