Ingredients

  • Vegetable cooking spray
  • 3 cups plus 2 teaspoons all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups sugar
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 3 tablespoons vegetable oil
  • 1 3/4 cups mashed banana
  • 1 1/2 teaspoons vanilla extract
  • 1 (8 oz.) can crushed pineapple in juice
  • Light Cream Cheese Frosting

Instructions

  1. Coat three 9-inch round cake pans with cooking spray; sprinkle 2 teaspoons flour in pans and shake to coat. Set aside.
  2. Combine remaining 3 cups flour, baking soda, salt, sugar, and cinnamon in a large bowl.
  3. Combine eggs, applesauce, and vegetable oil in a separate bowl.
  4. Add the wet ingredients to the dry ingredients, stirring just until the dry ingredients are moistened. Do not beat.
  5. Stir in mashed banana, vanilla extract, and crushed pineapple.
  6. Pour batter evenly into the prepared cake pans.
  7. Bake at 350°F (175°C) for 23 to 25 minutes or until a wooden pick inserted in the center comes out clean.
  8. Cool in pans on wire racks for 10 minutes; then remove from pans and cool completely on wire racks.
  9. Spread Light Cream Cheese Frosting on top and sides of the cooled cakes.
