Ingredients

  • 2 eggs
  • 2 c. buttermilk
  • 2 c. flour
  • 1 Tbsp. sugar
  • 1 Tbsp. cornmeal
  • 1 tsp. salt
  • 1 tsp. soda
  • 3/4 tsp. baking powder
  • 3 Tbsp. melted shortening

Instructions

  1. Break eggs into a bowl and beat with a fork.
  2. Add buttermilk and mix well.
  3. Add flour, sugar, cornmeal, salt, soda, baking powder, and melted shortening. Mix just long enough to blend well.
  4. Pour batter onto a hot griddle and cook until lightly browned on both sides.
