Ingredients

  • 1 lb. boneless lamb, cut in 3/4-inch cubes
  • 2 garlic cloves, minced
  • 3/4 cup apple juice or dry red wine
  • 1 cup low salt chicken broth, divided
  • 1/2 teaspoon dried rosemary, crushed
  • 1/4 teaspoon ground pepper
  • 1/8 teaspoon ground sage
  • 2 tablespoons all-purpose flour
  • 3 cups hot cooked linguine
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Spray a large skillet or saucepan with cooking spray and place over medium-high heat.
  2. Add lamb cubes and minced garlic; cook for 5 minutes, stirring frequently, until lamb is evenly browned.
  3. Add apple juice, 1/2 cup of chicken broth, crushed rosemary, ground pepper, and ground sage; bring to a boil.
  4. Reduce heat to low, cover, and simmer for 1 hour, or until lamb is tender.
