Ingredients

  • 4 lb. roasting chicken

  • 1/4 c. olive oil
  • 1 1/2 c. dry white wine
  • 1/3 c. lemon juice
  • 1 c. chicken broth
  • 2 Tbsp. butter
  • 4 Tbsp. flour

Instructions

  1. Clean, rinse, and pat the chicken dry.
  2. Make a mixture of the finely chopped garlic, sage, rosemary, salt, and pepper.
  3. Stuff the chicken with 3/4 of the herb mixture and sliced lemon.
  4. Tie the chicken as you would a roast.
  5. Rub the remaining herbs on the outside and between the legs.
  6. Preheat oven to 400°F.
  7. Place the chicken in a roasting pan with olive oil and bake until golden brown, about 1.5 hours.
  8. Add white wine and lemon juice to the pan and roast for an additional 10 minutes.
