Ingredients

  • 1 Tbsp. butter
  • 2 Tbsp. olive oil
  • 4 medium veal scallops, cut in strips 1-inch wide
  • 1 dry shallot, peeled and finely chopped
  • 3 Tbsp. flour
  • 2 c. chicken stock, heated
  • 1/4 c. sour cream
  • 1 tsp. chopped fresh parsley
  • salt and pepper

Instructions

  1. Heat butter and olive oil in a skillet over medium heat.
  2. Add the finely chopped shallot and sauté until translucent.
  3. Dredge the veal strips in flour, then add to the skillet and cook until browned.
  4. Pour in the heated chicken stock and simmer until the veal is tender and sauce has thickened.
  5. Stir in sour cream and chopped parsley, seasoning with salt and pepper to taste.
  6. Serve hot with biscuits or over noodles.
