Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 4 eggs
  • 1 cup molasses
  • 2 teaspoons soda
  • 1 tablespoon hot water
  • 1 cup buttermilk
  • 3 1/2 cups flour
  • 2 teaspoons ginger
  • 1 teaspoon nutmeg

Instructions

  1. Cream butter and sugar together in a bowl.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in molasses.
  4. Dissolve soda in hot water and add to the mixture.
  5. Alternately add buttermilk and flour, mixing after each addition.
  6. Add ginger, nutmeg, and vanilla, and mix until well combined.
  7. Portion the batter into small muffin tins.
  8. Bake at 375°F (190°C) for 6 minutes.
  9. Store in refrigerator until needed.
