A crisp, refreshing layered salad featuring crunchy vegetables, creamy mayonnaise, and savory Parmesan, perfect for summer gatherings and light, flavorful meals.

Ingredients

  • 1 head iceberg lettuce
  • 1 to 2 cups celery
  • 1 to 2 cups green bell pepper
  • approximately 4 green onions
  • 15 oz. can LeSueur tiny English peas
  • 2 cups mayonnaise
  • Parmesan cheese
  • 1 teaspoon sugar
  • 1 can water chestnuts

Instructions

  1. Break the head of lettuce into large pieces and place in a large salad bowl.
  2. Chop the celery, green bell pepper, and green onions, then layer over the lettuce.
  3. Drain the can of tiny English peas and add them to the salad.
  4. Drain the can of water chestnuts, if using, and add to the salad.
  5. Spread about 2 cups of mayonnaise over the layered vegetables, smoothing into an even layer.
  6. Sprinkle grated Parmesan cheese over the mayonnaise layer.
  7. Sprinkle 1 teaspoon of sugar over the cheese, if desired.
  8. Cover the bowl with Saran Wrap and refrigerate overnight or for several hours.
  9. Before serving, add bacon bits on top of the salad.
  10. Toss the salad gently to blend flavors and serve.
