Ingredients

  • 3/4 lb. mild pork sausage
  • 1/2 cup butter or margarine
  • 1 1/2 cups chopped celery
  • 1 cup chopped onion
  • 1/2 cup chopped carrot or grated
  • 9 cups dry bread cubes
  • 1 large apple, cored and finely chopped
  • 1 teaspoon ground sage
  • 1/2 teaspoon crushed thyme
  • 1/2 teaspoon crushed dried rosemary
  • 1/4 cup snipped parsley
  • 1/2 to 3/4 cup turkey or chicken broth

  1. In a large skillet, crumble the sausage and cook until browned.
  2. Drain off all but 1/4 cup of drippings from the skillet.
  3. Add butter, chopped celery, chopped onion, and chopped carrot to the skillet.
  4. Cook, stirring occasionally, until the onion is tender.
  5. In a very large bowl, combine dry bread cubes, chopped apple, ground sage, crushed thyme, crushed rosemary, snipped parsley, and the sausage mixture.
  6. Toss lightly to mix.
  7. Add enough broth to moisten the mixture.
  8. Season with salt and pepper to taste.
  9. Use to stuff a 10 to 12-pound turkey.
